∞∞∞ I have tons of cookbooks, and now that have some time, I want to get the most out of them! All with compassion.

Curried Chick Peas and Dahl
From PETA's website. You can find the original recipe here.
I didn't have any orange juice concentrate, so I skipped that, and used less tomato just because I had some sauce left over from the stuffed peppers I made last night (recipe here). I added a bunch of other veggies I had in the fridge, like green beans, carrots and bell peppers, the last two mostly for the color. A *very* modified recipe, but it gives me the chance to link to PETA. :)
The millet I made as homework for my Vegan Mastery Program. First time ever, and I overcooked it, but loved it nonetheless.
Beautiful pottery, isn't it? It's by Adriana Serdán (website).

¡Salud!

Garbanzo and cilantro croquettes
I got the recipe from my friend Lee's Vegaloca blog. You can see her original recipe here. I made some modifications mostly because I didn't have all the ingredients. Firstly, and very importantly, I didn't use black eyed peas, but garbanzos soaked overnight and cooked this morning. I had no carrots, so I used some zucchini instead. I found that the garbanzos absorbed moisture, so I only added half the flour called for in Lee's recipe. I fried the first batch; for the following batches, I just added a little bit of oil and cooked them that way.
The spunky taste combination of cilantro and onion is amazing. As I may have mentioned before, I'm a ketchup fiend, and this time was no exception. Yum, Lee, this was a great idea!!!
(I may very well eat some of the uncooked leftovers raw with some lime juice and finely diced chili peppers!)

Top 7 things I learned by doing Vegan MoFo/ Las 7 cosas que aprendí al participar en Vegan MoFo
English:
1. I have a rather short attention span.
2. What IS tempeh?
3. I suffer from a serious lack of pretty serving platters.
4. I don’t have nearly as many good cookbooks as I thought I did. In fact, I have... two.
5. This takes time to plan, time to execute, time to document and time to upload! HUGE production, Vegan MoFo.
6. Really cool people are doing this.
And finally...
7. Now I want every month to be November!
Thank you, everybody, and hope to be reading you soon!
Y en español:
Thank you, everybody, and hope to be reading you soon!
Y en español:
1. Tengo un poder de concentración minúsculo.
2. ¿QUÉ es el tempe?
Vegan MoFo 2010: Amaya's Egoless Egg-Free Salad
I've saved the best to last. This recipe, from (do I even have to say it?) Vegan World Fusion Cuisine, is my all-time favorite from this book. Whenever I bring this dish to parties, it is an immediate success, and always elicits the same response: "I don't know what it is, but it's delicious!" I use okara (soy pulp) instead of tofu, and find that I like it better with twice as much veggie mayonnaise (recipe in this book, too) and vinegar.
And whatever is left over makes a good snack, on toast:
Enjoy!
