Vegan MoFo 2010: Oven Odyssey Part 2



The second recipe was The Good Shepherd's Pie, again from my guru book Vegan World Fusion Cuisine. They recommend serving it with Avalon's Magic Mushroom Gravy and Shanti's Sour Cream. 



 I have to say this needs work. There are way too many flavors going on (the sage was overpowering, I added dry from when I used to have it in the garden). The coconut milk in the potato mix was an unnecessary waste (it is quite a luxury here), and I think I will use good old soy milk next time.

Maybe I need to pack the tofu mix a little more tightly so it won't crumble as easily. Although the instructions don't mention the crumbling directly, it IS implied by the fact that one of the options they give is to put the potato layer at the bottom so that individual pieces may be more easily served.

And now to the the gravy, which is a true delicacy. It is very rich and not quite as greasy as other gravies. I find the quantity to be too little, so I'll just make twice as much next time.


The Sour Cream is delicious, too. I don't really need it, but my darling loved it and complimented it specifically.


All in all, a light dish which, once perfected, can become one of my favorites.

Vegan MoFo 2010: Odisea del Horno parte 1

Me propuse vencer mi miedo a los hornos, al fuego y a todo lo que funciona con gas, así que me fui de compras y me motivé a cocinar dos recetas a las que les había echado el ojo. 

La primera fue este Macarona bil Béchamel, o Macarrón con Salsa Bechamel y Relleno de Champiñones, que encontrarán en inglés en el increíble blog Alf Hana. (Gracias, chicas, este blog es una maravilla y una buenísima fuente de información para los amantes de la cocina egipcia que también son veganos.)

Mi intento resulto bastante exitoso. Chequen: 


La salsa bechamel debe ser bastante grasosa, pero aun así me gustaría experimentar un poco para hacerla más ligera. Y la próxima vez que prepare esta receta, le voy a poner lentejas al relleno de champiñones, para que éste sea un platillo completo.

Vegan MoFo 2010: Oven Odyssey Part 1

I was determined to lose my fear of ovens, fire and anything related to gas, so I went shopping and got myself really motivated to make two yummy recipes I'd had my eye on. 


The first one was this Macarona bil Béchamel, or Macaroni with Bechamel Sauce and Mushroom Filling, which you can find in the amazing Alf Hana blog. (Thank you, ladies, this blog is incredible and a great source of info for lovers of Egyptian cuisine who are also vegan.)


My attempt was quite successful. Take a look: 



Bechamel sauce is supposed to be quite greasy, but I'd still like to experiment a bit more to get it lighter. And next time I make it I am going to add lentils to the mushroom mix, so this can be a complete meal.

Vegan MoFo 2010: Shopping!/ ¡De compras!

I was out shopping for hours yesterday. Came home exhausted bust still managed to overcome oven fears. More in the next post!

Me fui de compras ayer durante horas. Llegué exhausta, pero aun así logré vencer mis miedos a prender el horno. ¡Más en la siguiente entrada!

Vegan MoFo 2010: Ye Olde Chinese Stir-Frye Disastre

It must’ve been my mood that day. The noodles overcooked in a matter of seconds (they’ve always been patient before!), the flavor was inexplicably bland, and the parsnip went bitter upon reheating. What up???

Maybe it was these weird veggies that grow with price tags on them...


But at least it looked all right!

Vegan MoFo 2010: Honorable Desastre de Sofrito Chino

Debe haber sido mi humor de ese día. Los tallarines se pasaron de cocción en cosa de segundos (siempre habían sido muy pacientes), el sazón estaba inexplicablemente desabrido, y la chirivía (pastinaca... bueno, un nabo largo) se amargó horrible cuando lo recalenté. ¿Qué onda?

Quizás fue por estas verduras extrañas que crecen con etiquetas de precio...



¡Pero por lo menos se veía bonito!

Vegan MoFo 2010: Curry de vegetales con tortitas de garbanzo



De Comida deliciosa sin gluten, trigo ni lácteos por Nicola Graimes (2007 Parragon Books Ltd.)

Uff, la receta más cansada de todas, hasta ahorita. Con una lista larguérrima de ingredientes, en un orden raro que me perdía a cada rato. No estoy acostumbrada a pesar las cosas (muchos de los ingredientes venían en gramos, en vez de en tazas), así que me tardé el doble en calcular cuánto se necesitaba. Pero tengo que aprender, y afortunadamente tengo una báscula que funcionó bien, la pobrecita. Además, me tardé una eternidad en prepararlo todo. 


Las tortitas salieron con todo tipo de consistencias, conforme se iba espesando la masa, y como de verdad no me encantan las cosas fritas, estoy pensando seriamente en tirarlas y agregarle a la receta unos viles y silvestres garbanzos cocidos (que están ya listos en el refri, gracias).
